Cottage Cheese Waffles

Cottage Cheese Waffles

Prep: 5 minutes | Cook: 10 minutes | Yield: 6 servings (3 whole waffles)

I used the Bella Flip & Store Waffle Maker which features their proprietary EverGood™ Ceramic Nonstick Coating, which is made without PFAS, PFOA, PTFE, lead, and cadmium (this was the best affordable waffle maker I could find locally).

Ingredients

  • 1 cup MC Dairy pressed cottage cheese (available at Costco and Walmart)
  • 3 eggs
  • 5 TBSP milk (I used 2%)
  • 3 TBSP melted butter
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 1/4 cup organic all purpose flour

Instructions

  1. Blend the wet ingredients
  2. Mix in the baking powder and flour
  3. Plug waffle maker and allow it to heat up (follow instructions on your waffle maker)
  4. Add about 3/4c batter to the middle of the waffle maker, making sure it's not piled up on one side
  5. Follow waffle maker instructions, and add 1-2 minutes to the time (keep checking on the waffle, it should be golden brown).

Note: The batter will be very thick if following this recipe. If you use wet cottage cheese, reduce the milk to 3 TBSP. You can sub butter for coconut oil.
