I used the Bella Flip & Store Waffle Maker which features their proprietary EverGood™ Ceramic Nonstick Coating, which is made without PFAS, PFOA, PTFE, lead, and cadmium (this was the best affordable waffle maker I could find locally).
Ingredients
- 1 cup MC Dairy pressed cottage cheese (available at Costco and Walmart)
- 3 eggs
- 5 TBSP milk (I used 2%)
- 3 TBSP melted butter
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 1/4 cup organic all purpose flour
Instructions
- Blend the wet ingredients
- Mix in the baking powder and flour
- Plug waffle maker and allow it to heat up (follow instructions on your waffle maker)
- Add about 3/4c batter to the middle of the waffle maker, making sure it's not piled up on one side
- Follow waffle maker instructions, and add 1-2 minutes to the time (keep checking on the waffle, it should be golden brown).
Note: The batter will be very thick if following this recipe. If you use wet cottage cheese, reduce the milk to 3 TBSP. You can sub butter for coconut oil.
